Cucumber Subs

Cut a cucumber in half.  Scoop out the insides.  Add meat of your choice (turkey, ham, salami, etc), Spread on some laughing cow cheese, and add some dijon mustard.  Enjoy!



Skinny Buffalo Dip

1/2 C Lite Mayo
7 oz. plain greek yogurt
1/4 to 1/2 tsp garlic powder
small handfull of bleu cheese (optional)

Mix together mayo, greek yogurt, and buffalo sauce.  Slowly add the garlic powder, starting with 1/4 tsp and adding a little more at a time until you reach the desired taste.

Top with bleu cheese and serve with cut vegies.


Mini Zucchini Pizza

Serving size: 2 pizzas  calories:  75  fat:  5g  Carbs: 3g  Fiber: 1g  Protein:  5g 

2 Medium Zucchinis Sliced
2 Tbsp unsalted tomato paste
Dash of Garlic Powder
1/4 c reduced fat parmesan cheese
3 Tbsp Pizza Sauce
1/4 tsp oregano
3/4 c reduced fat mozzarella cheese
Pepperonis
8 olives, pitted, chopped

Preheat broiler on high.  Slice zucchinis at a slight diagonal so that you have about 16 pieces and place zucchini slices on a baking sheet. Set aside.  Mix pizza sauce, tomato paste, oregano and garlic powder.  Spread about one tbsp over each zucchini slice.  Mix together your cheeses and sprinkle about a tbsp over each zucchini slice.  Then add your chopped olives and pepperoni slices on top of the cheese and place baking sheet in the oven to broil for about 3 to 5 minutes until cheese is melted. 


No sugar added BBQ Sauce

1 tbsp olive oil
4 garlic cloves
1 1/2 c tomato sauce
2 Tbsp lemon juice
4 Tbsp brown mustard
3/4 c smuckers sf apricot preserves
1 lg. sweet onion, chopped
1 1/2 c ketchup
1/4 c vinegar
2 Tbsp molasses
2 Tbsp worcestershire sauce
1 tsp kosher salt
5 tbsp chili powder

Saute onions and garlic in olive oil over medium heat until golden brown and softened.  Reduce heat to low and add ketchup, tomato sauce, vinegar, lemon juice, molasses, mustard, worchestershire sauce, preserves, salt, pepper, chili powder & liquid smoke; simmer 30-45 min. until mixture is thick and delicious.
